Chia-Banana Energy Bowl

Tweak this recipe to your liking and it will be delicious. I’ve been eating this almost every morning of the week. It is my go-to super satisfying meal. The Chia Seeds are the star thickening agent for this recipe. This breakfast bowl keeps me full and steady for a good 4-5 hours. The healthy slow energy burning fats from the Chia Seeds and Almonds keeps your blood sugar balanced, cravings far away from you, and promotes healthy skin and hair. Adding a spoonful of Maca powder gives this recipe a warming feeling, while also energizing you. On those cold mornings, I like to snuggle up with this bowl after I have lightly warmed up it on the stove, and add a splash of cinnamon for more body warming effect and a touch of extra sweeteness. Maca is so great for helping your body cope with stress, energize yet keep you grounded, and balance out those wonky hormones us ladies and men go through.
This is also great as a cold “cereal”. Topped with some fresh light berries is perfect to keep you feeling fresh as you start the warm day.
I prefer to keep this light on the sweet side, so I only add a drop of liquid Stevia extract or a touch of maple syrup. The maca and bananas I use hit my sweet spot.
-1 cup water
-1 tablespoon Almond Butter (I like to use raw almond butter, or homemade)
-1 tablespoon Maca powder
-1-3 drops English Toffee liquid stevia extract or 2 teaspoons Maple Syrup/raw Honey, add more if you would like it sweeter.
-2 tablespoons Chia Seeds (black or white)
-1 spotted (ripe) banana
-4 whole plain almonds for crunchy texture (optional)
-1/4 teasoon Cinnamon (organic preferably), or to your taste.
Blend the first four ingredients on high for about 10 seconds.
If eating it warm, pour it onto a small sauce pan and add the chia seeds. Stir well and let sit for about 7 minutes, stirring a couple of times in between. Now heat it on low until its warm enough for you. While it’s heating you can chop up the almonds into small pieces. Then add the chopped almonds, sliced banana, and sprinkle the cinnamon on top. Grab a spoon and you know what to do.
If you don’t want to heat it, pour onto a bowl, add the chia seeds, and stir well. Let this sit for about 7-10 minutes, stirring a couple of times in between. While it’s sitting and thickening, chop up the almonds into small pieces. Once it has thickened, you can add the sliced banana, chopped almonds, and sprinkles of Cinnamon. Grab a spoon and you know what to do.
Cold or warm, this is one super satisfying and comforting meal to enjoy.
It is perfect to start the day feeling fresh, energized, and specially nourished. It is also great for an afternoon meal to regain energy and have it last till dinner time. This may look like breakfast food, but who makes the rules for dinner? After a long day you can come home to this to satisfy that growling stomach.
