Lucuma Candy Sauce (Low Glycemic, Raw, Paleo, Sugar Free, Gluten Free)

As I mentioned in my previous post, here is the Lucuma Candy Sauce that I topped off my Blueberry-Mellow Lime Pie the first time I made it. It is perfectly sweet and low glycemic. The Lucuma powder lends a natural friendly sweetness, and just a couple of drops of Stevia enhances the sweetness of the powdered Lucuma. Both these natural occurring sweeteners create a unique sweetness.

Lucuma powder comes from the dried exotic Lucuma fruit from South America. It is imported in its dried form. I usually find it in at Whole Foods, Good Earth in Fairfax, or a health grocery store. You can also order online and I will provide you with the link at the end of this post. Lucuma powder is great to use in your smoothies, shakes, and even for baking. The taste is delicious and a treasured one in my homeland, Peru. The sweetness is low glycemic and the texture will help to thicken up a bit your recipes. I like to have it in my pantry every now and then as a treat to add to my smoothies and to have fun with it by using it as a flavoring ingredient. Still curious about Lucuma? Stevia is another natural occurring sweetener. Stevia is an herb that helps to balance your blood sugar levels. Extracts of Stevia are loaded with anti-oxidants. The stevia for this recipe will not make it overly and unpleasantly sweet. It is just a couple of drops to enhance the sweetness of the Lucuma and Coconut Oil.

The Extra Virgin Coconut Oil used for the base of this candy sauce is a super nutrient packed food. It has been used since ancient times for rejuvenation and healing. Its special fatty acids known as Medium Chain Triglycerides, are converted easily into available energy for the body to burn (specially great for athletes). Another awesome aspect of the special fatty acids of Coconut Oil is that they enhance the absorption for the body of nutrients.

Are you ready for super food candy sauce?

Try It

-3 tablespoons melted Extra Virgin Coconut Oil

– 1 Tablespoon Lucuma powder

– 1/2 Tablespoon Mesquite powder (another natural low glycemic sweetener that comes from the Mesquite pod. If you don’t have this or don’t want to buy it, you can instead replace the amount with Lucuma powder.)

– 2 drops of Liquid Stevia extract

Mix everything with the warm and melted coconut oil. Pour onto a small bowl and set in the fridge to chill and firm up.

I let mine harden in the fridge and melted a small portion to pour it onto my slice. If you want a melted sauce on your slice as well, make sure the pie is fully thawed because if it is still very cold then the sauce will harden fast on your slice.
