Healthy Zucchini Pasta (Gluten Free, Paleo, Raw, Dairy Free)

Yes. That’s right. Healthy-Pasta. With zucchini sneaked in there. Amen!

Why do I love and rave about zucchini noodles so much to people? Because it is totally gluten free which means everyone can enjoy, it is raw and fast to make, it is made by YOU, and it is wholesome. I wrote a whole blog post on the benefits of zucchini noodles over grain and corn based noodles that you can read here. I used a small vegetable slicer that has little teeth to make noodle strands. You can find this at a kitchen store or online.

This recipe is zucchini noodles with a raw, dairy free, and tangy avocado homemade dressing. I decided to add Kale in the mix so you get your greens in. Once the kale is coated with the dressing, the dressing will help to break down the tough fiber of the Kale adding a nice texture to the pasta dish. I also had to throw in raw mushrooms because they are so important to have during this season to keep your immune system strong and get a nice dose of Vitamin D. I’m not much of a fan of raw mushrooms but once they get mixed with this dressing they become very enjoyable to eat. You can slice them much thinner if you’d like!

This is such a great recipe for your immune system and to heal from inflammation. There is a great variety of ingredients in this recipe that are easy to absorb nutrients from and will keep you full.

Try it

Makes about 3 servings

Pasta:

-2 zucchinis peeled or unpeeled (if you use unpeeled some of your noodles will be green).

-3 leafs of Kale sliced thinly top to bottom.

-6 Basil leaves thinly sliced.

-2 small Shiitake mushrooms cleaned with a damp paper towel and then sliced thinly.

-thin strips of onion, as much as you’d like.

Mix the ingredients together in a bowl and set aside.

For the dressing:

-1/4 cup of water

-2 small mandarins

-1/2 lime squeezed

-1 teaspoon minced garlic

-1 teaspoon Apple Cider Vinegar

-1/4 teaspoon onion powder

-1/4 teaspoon Cummin powder

-1 teaspoon Extra Virgin Olive Oil

-1/4 teaspoon Sea Salt

-1/2 an avocado

Blend on high all of the ingredients except for the avocado and the olive oil. Once blended, now you can add in your avocado and olive oil last. Blend on medium speed in order to not oxidize those precious fats.

Pour the dressing over the pasta and mix everything well.
